Boil pasta, salt in boiling water until it's tender. Cook the meat. While the meat is in the pan, add the butter to the pan. Let the butter soften. Set the pan aside. Secondly add the tomato sauce, red pepper, basil (remove leaves and add), garlic, and oregano (or other herbs of your choice), and heat until the tomatoes just start to melt. Salt to taste. Pour in the lemon butter sauce and reduce the heat to low. The sauce will thicken a bit. While the sauce is thickening, plate up the pasta. Place the pasta on the plate top with the spiedini. The quality of the meat is the key here. Some really good chicken will work well with this tapestry of flavors, but if the meat is old and tough, you won't be happy. If you are in the mood for a heartier option, try substituting the chicken with Italian sausage, pork belly, and/or top it with some sausage and cheese.
